Watermelon Mojito Blocktail

Sweet watermelon and the sharp twist of lime and mint come together in perfect unison to make this mojito that keeps you coming back for more.

INGREDIENTS:

  • 1 Watermelon Lime Frozen Sunshine iceblock

  • 60 mL white rum

  • 3 lime wedges

  • 3 mint leaves

  • 3 x 2cm cubes of watermelon

  • 1⁄2 cup ice

  • Mint sprig, to garnish

  • Top with soda

  • Optional: 1 additional iceblock to garnish

1. Remove the stick from your Watermelon iceblock by slicing lengthwise down the middle, then chop it roughly and add it to your cocktail shaker.

2. Add the lime, mint, white rum to the shaker and muddle together. (if you don’t have a muddler, try a rolling pin or wooden spoon.)

3. Add ice and watermelon cubes and shake until the shaker is frosty.

4. Pour into a glass with the additional Watermelon iceblock.

5. Top with soda and garnish with mint sprig.
